This dish is the epitome of express cooking; all the ingredients are just poured into hot, freshly cooked pasta and are stirred together to create a delicious harmony of flavour. Cooking TIme: 10-12 minutes depending on how you like your pasta.
Handful of Linguine
1-2 Egg Yolks (Up to your personal preference)
2-4 Tablespoons of Cream (Personal Preference)
1 tsp Creme Fraiche
1/2 Lime (Juice and Zest to taste)
grated hard cheese of choice (amount to taste)
3-4 Button Mushrooms
3-5 leaves of Basil
Salt and Pepper to taste
Cooking:
1. Throw linguine in a pot which is filled with boiling, salted water. Cook as directed on the packet for Al Dente pasta.
2. Now place a steaming rack above the pasta, and place sliced mushrooms on it. Steam till the mushrooms start sweating; about 1 minute. Remove from heat.
3. Next, mix Egg Yolks, Creme, Creme Fraiche, Lime juice/zest, salt, pepper and cheese in a bowl. Once emulsified, mix in mushrooms. Be careful not to break them.
4. Once pasta is cooked, take a small, shot-glass amount of the boiling water from the pot. Drain pasta, return to pot, and stir in sauce slowly to prevent the eggs from clump cooking. Now add the small amount of pasta water.
5. Finally, chop up the basil, and garnish over pasta. Mix well, and enjoy.
